Sorry, still not convinced this is the best aproach, shouldn´t the program let me do it? You mean that progress notes that are filed under DIFERENT episodes are NOT independent?

That seems weird, since the date could be a lot more important to some people than me, for example pediatricians.

You have recorded data in 3 encounters - 3 times during the
day starting one encounter at each.

If you want to document past encounters chronologically
correct you need to

a) fully document one encounter
  (progress notes for all episodes, test results, documents)
  there is currently no going back to a previous encounter
  from the GUI
b) start a new encounter (there's a menu item for that)
c) go to a)

Later go changing the dates and times of encounters as you
see fit. You can do that even now. What you cannot do from
the GUI currently is to *split* progress notes.

Regardless of that approach: When you change the details of
an encounter the details change in all displayed parts of
the encounter. If the encounter is displayed under 3
different episode-threads all 3 threads will show the
updated encounter details -- because it is one and the same
encounter.
