How long did you wait? It first creates a 2048 bit RSA key (only on the first
start), which can take a while. You can see additional messages with the
option "-L DEBUG". And for multiple interfaces, the recommendation is to set
INTERFACE to the external "Internet" interface, not to specify manually.
Does the gnunet-stats request come from loopback and is that connection still
listed as TRUSTED in the configuration?
I suspect that you either did not wait long enough for gnunetd to start the
first time OR that you misconfigured the network.
