Unfortunately, there is currently no clear path to making a 64-bit macOS distribution of LilyPond. There is a conflict between Apple's Software License Agreement for their XCode developer tools and the GNU General Public License that LilyPond uses. This has been discussed at length elsewhere on LilyPond email lists, references can be given if they'd be helpful for you.
