Every mail client I've run across in the last six or eight years has 
defaulted to taht, regardless of OS.  Shame on the developers for making 
the default be Doing Things Wrong, and shame on people with enough sense 
to use something like Pan for not changing their client's behavior to 
The Right Thng.
