I've not found any log file. How to activate log ?

... no output ! no result.
As your peer did not connect to the overlay, that's not surprising at all.

$ gnunet-arm -s

Oh. http://gnunet.org/ turned out to be down this morning, no idea why
(except that the Apache process somehow was no longer there, nothing in
the logs except for the kernel complaining about a SYN flood).
I've restarted it...

I'm not sure which exact version is running on sam/fulcrum here, but
somehow you're not connecting to it.  Did you try gnunet-transport -t?

$ gnunet-statistics
Those just show that your peer did not succeed at connecting to the overlay;
with the hostlist being down possibly being one significant contributor...
